Investment immigration to Ireland and tasting Irish cuisine: The reason many people scoff at Irish coffee is that they have never actually tasted an authentic one. The coffee they have consumed lacks the rich nutty aroma, the clean bitterness, the caramel-like sweetness, and the intense sensory impact provided by whiskey. The Irish coffee they usually encounter is often lukewarm, with thin, sparse cream on top, resulting in a poor taste. In reality, it is difficult to make a true Irish coffee using mediocre coffee, cheap whiskey or brandy, and canned whipped cream; in other words, this "ordinary" Irish coffee is too bland and fails to evoke the joy of an after-dinner drink.

How to make an authentic Irish coffee?

Irish coffee is different from other cocktails. Its origin is very clear: in the winter of 1943, chef Joe Sheridan at the Foynes Port in Limerick, Ireland, prepared a drink for passengers of a flying boat who were forced to return due to bad weather, and this drink soon became a local specialty. After World War II, this drink was brought to the United States by a reporter from the San Francisco Chronicle, who asked the local Buena Vista Cafe to replicate it for him. Today, this cafe sells 2,000 cups of this drink, known as "Irish coffee," every day.

Although Irish coffee has a long history, its authentic preparation method is almost unknown today. Some people even squeeze green mint cream onto the coffee to commemorate its home, Ireland. Below, let us take a look at how to make an authentic cup of Irish coffee.

1. Coffee

The Irish passion for tea is well known. It is hard for me to imagine what kind of coffee that Irish chef used back in 1943, but it certainly would not have been espresso. Some cafes use espresso when making Irish coffee, which only makes the drink taste more like a strong martini than a mellow after-dinner liqueur.

In fact, drip coffee is a good ingredient for making Irish coffee. "Espresso or Americano often overpowers the silky, smooth taste of Irish whiskey." Irish coffee should be served in a larger volume to be savored slowly, something that espresso cannot satisfy.

2. Sugar

Whether you add sugar or not (I personally do not like to add sugar, but for the sake of authenticity, it should be added), sugar is crucial for Irish coffee because it affects more than just the taste of the coffee. Without sugar, the cream on top of the coffee will not float, so it is best to add a little. Legend has it that authentic Irish coffee contains brown sugar. Many cafes also follow this tradition. Chef Neven Maguire uses soft brown sugar, while other cafes use dark brown sugar. I think both are very suitable as they have high solubility, but I feel that dark brown sugar makes the coffee too bitter. Maguire claims he has "further improved the Irish coffee recipe" and that he makes the "world's best Irish coffee." His method is to melt the sugar in a pan first. I do not think this is necessary. Perhaps he does this to avoid diluting the coffee while the sugar melts, but since there is very little water in sugar, this is being a bit pedantic.

3. Alcohol

Maguire is also very particular about the use of alcohol. Most people pour whiskey directly into the coffee, while he pours the whiskey into a pan and ignites it to burn off the alcohol, then adds Baileys and sugarcane spirit to increase the intensity of the coffee. Although I think this method is cool and the sugar in the alcohol is fully released, I cannot taste the whiskey itself beyond the sweet flavor. Of course, Baileys, sugarcane spirit, and coffee go well together, but frankly, they are just icing on the cake; whiskey should be the star of Irish coffee.

4. Cream

The most difficult part of making Irish coffee is how to make the cream float on the surface of the coffee. At least, I spent a lot of time trying to get the cream to float perfectly. I think the key is that the coffee should be hot, the cream should be chilled, and do not whip the cream too thick; a small amount of cream is easier to float. Many cafes use a special heavy cream with a lower fat content than the double cream available on the market. You can also use fresh cream, but it does not float very well. Some cafes add stout and barley syrup while whipping the cream. While this is interesting, it ruins the sweetness of the cream, the strength of the alcohol, and the mellow texture.

Finally, I would like to add a recently popular way to drink it—sprinkling some cinnamon powder on the cream. This not only makes the coffee look better but also tastes great. If you can sift the cinnamon powder into the shape of a shamrock (the national flower of Ireland), that would be even better!
